Fungal α-Amylase
Fungal amylase can rapidly hydrolyze the α-1,4 glycosidic bonds in gelatinized starch solution, linear-chain starch, and branched-chain starch, producing soluble dextrins along with small amounts of maltose and glucose. Prolonged reaction will yield a syrup containing a high proportion of maltose and a minor amount of glucose.
It is water-soluble, and its aqueous solution appears as a rice-soup-colored liquid.
