Keratinase
Keratin is commonly found in the scales of skin, feathers, horn, hooves, and fish. Keratin is normally resistant to proteolysis by conventional proteases due to the large number of cross-linked disulfide bonds and hydrophobic amino acids that bind peptides tightly. In addition to peptidase, keratinase also contains disulfide reductase activity, which can efficiently break down disulfide bonds and denature the protein. Peptidase then gradually degrades the denatured protein into peptides and amino acids. Therefore, keratinase can hydrolyze keratin-rich protein materials under mild conditions.
